Food Friday: Chocolate Eclair Squares

Chocolate Eclair Squares
Happy New Year guys! How did you spend your New Year's Eve? I was up making some desserts for us, a little bit of experimenting, if you will. This is a quick and easy recipe that anyone can do. It's very delicious, too!

Ingredients
2 cups cold milk
2 pkg. (3.4 oz each) Jell-O Vanilla Instant Pudding
1 tub (8 0z) Whipped Topping, thawed
64 Nilla Wafers
2 squares semi-sweet chocolate

Directions
Beat milk and pudding mixes with whisk for 2 minutes. Stir in whipped topping.
Arrange 16 wafers at the bottom of an 8-inch square dish; cover with one-third of the pudding mixture. Repeat layers twice.
op with remaining wafers.
Refrigerate for 4 hours.
Melt chocolate squares. Drizzle over dessert.
Enjoy!

Makes 16 servings, one square each.

If You Want Time

This year marks my second year to be away from home for Christmas. I know I’ve been yakking about this topic since the start of December but I just can’t break free from my melancholy. In a few hours, a part of my family and my hubby will be having their Noche Buena (Christmas Dinner). It will be a night spent with my hubby’s family – his parents, his sister’s family, and perhaps my aunt’s family, as well. I know it would be just like last year…

What I remember most is the part where I shop for gifts for my family. Oh, I don’t get them much but I try to get them something that they would wear or use. Of course, that goes without saying that I would also want to spoil myself for the holidays. But I do keep my spending at a minimum which is not as bad as what others are doing hehehehe.

It’s just so unfortunate I couldn’t find a holiday gift guide on the Internet that year. I just didn’t browse the net that much because I know that in Dumaguete, we cannot possibly order online and have them delivered because it would cost a fortune! My Christmas Wish List

I know I promised not to shop for Christmas presents this year because I really have no one to give gifts to. However, I still can't deny the fact that I can never resist checking out online goodies! Online goodies for me, of course! I do have my own Christmas wish list for myself but I doubt that getting ahold of them all is possible. But, it doesn't hurt to hope, right?

For the most part of the year, I have always wanted to have my very own PlayStation 3 console. This is in preparation for Final Fantasy XIII which will only be released for PS 3. Not to mention that I already gave away my PS 2 console to my cousin back in the Philippines.

Now that I have started to love photography, I am hankering for a Nikon D90. I know it's a bit steep for a beginner but I can still add that to my list, can't I? Lenses would go well the camera, too hekhekhekhek...

Next would be a Mac. I really have no idea what to get and how to operate one but still, I love exploring new things. There have been a lot of positive reviews with the Mac as compared to a PC but I'm willing to try out the Mac first before I can take a side.

I would also love to get the collectors edition of Twilight and get the Twilight Saga boxed set. With those in mind, I also would want to get the $100 limited edition Tales of Beedle the Bard. This is also quite pricey but...

Lastly, I wish for a round trip ticket to the Philippines! Donors, anyone?
